If you’re like me, then you’re always looking for ways to make your days go just a little bit smoother. Between dinner for six, activities at least three nights a week and all those unexpected interruptions that happen from time to time, if things are going to fall apart (and let’s face it – sometimes, they do), it usually happens in the evening.

I first became acquainted with Costco during last year’s Costco Mom Hour event and I have been singing their praises ever since. From its competitive pricing (and products I absolutely love) to its clean, well-lit shopping experience, shopping trips to Costco have become a highlight for my older kids and I. Read on to learn about some of my family’s favorite Costco brand products that help make evenings a little less stressful, plus find details about this year’s FREE Costco Mom Hour event.

For Dinner

Costco Mom Hour

Kirkland Signature Chicken Tortilla Soup. Tender chicken meat, diced tomatoes, sweet corn, and roasted chili peppers cooked in a rich chicken stock and infused with tons of flavor. This soup (which we love paired with KS tortilla strips) comes in a 2-pack of convenient 4-serving containers and cooks easily on the stovetop or in the microwave – no prep, no messy cleanup. With a variety of different flavors, KS soups are also handy for when you need to deliver a quick dinner to a friend who’s just had a baby, undergone surgery, etc.

Kirkland Signature take-and-bake macaroni and cheese. I know what you’re thinking – it’s mac and cheese, how good can it be? Trust me. It’s delicious. Costco has a fantastic selection of take-and-bake (or take-and-eat!) dinner options – everything from salads to pizzas and flatbreads to meatloaf and lasagna. The macaroni and cheese is a consistent hit in our house, with kids and adults alike. For an extra bit of flavor, sometimes we’ll top it off with KS chicken breast strips or bits of KS bacon which, truth be told, IS as good as it sounds.

Kirkland Signature Tilapia Loins. I’ll be honest, I felt like I had earned a parenting badge of honor the day I cooked fish for my kids and all four of them actually liked it. The answer: tilapia. These individually wrapped servings from Costco make for a quick and healthy weeknight meal. Don’t miss our family’s favorite recipe below!

Baked Tilapia with Tomatoes and Feta

Ingredients
  1. Extra virgin olive oil (EVOO)
  2. Garlic powder
  3. Onion powder
  4. Oregano
  5. Parsley
  6. Tilapia filets/loins (3)
  7. Roma tomatoes (5)
  8. 1/2 cup feta cheese
  9. Parmesan cheese
Instructions
  1. Preheat oven to 425 degrees.
  2. Drizzle EVOO on bottom of baking dish.
  3. Place tilapia filets/loins in baking dish; layer with half of the tomatoes and sprinkle some garlic powder, onion powder, oregano and parsley on top. Top with feta cheese. Repeat.
  4. Sprinkle with parmesan cheese.
  5. Bake for 17 minutes.
  6. Pair with your favorite side.

Whether you’re busy with after school activities or just trying to keep up with those late afternoon hunger pains, every mom needs a stash of grab and go snacks. During a recent trip to Costco, I became acquainted with (read: fell in love with) Kirkland Signature Daily Facial Towelettes. These mild, paraben-free wipes are great for any mom who wants to quickly freshen their look – at home, in the car, at the gym – and come in resealable packs for daily use or travel. 

About Costco Mom Hour

Our team is excited to join the City Moms Blog Network and Costco for our second annual Costco Mom Hour. Shop at 9 a.m. on Friday, November 4, BEFORE Costco opens its doors to all of its members!

Mom Hour is for YOU and all your friends (and kids) to shop together. The more the merrier! Enjoy swag, snacks, samples and giveaways with other Kansas City moms.

MEMBERSHIP SPECIAL: The Membership Special is valid from October 14th through November 4th. You can sign up online and print it off, then take it to any Costco warehouse to redeem (between now and November 4th). You do NOT need to attend the event to receive the special. New Gold Star Members will receive a $20 Costco cash card and $43 in coupons. You can also choose to upgrade to an Executive Membership and will receive an additional $20 Costco cash card.

REFER A FRIEND: If you are a current member, you can refer a friend to the membership special and you will receive a $10 Costco cash card (limit ten referrals per member). You must be present with them at the warehouse (when they redeem their membership) to receive the cash card.

SWAG: The first 100 people to arrive at the warehouse on November 4th will receive a swag bag. One swag bag per family.

IN-STORE PURCHASES: Only members will be allowed to make purchases during the event; however, anyone can attend.
